<i>In-vitro</i> stress stability, digestibility and bioaccessibility of curcumin-loaded polymeric nanocapsules

Nanoemulsion-based delivery systems have a considerable potential for the encapsulation, protection and of lipophilic bioactives. In current study, in-vitro stability curcumin-loaded single (NEI), double (NEII), triple-layered nanostructures was investigated against varying environmental stress (temperature, pH, ionic strength) storage conditions. addition, their functional performance, as influenced by number polymer layers, also assessed comparing lipid digestibility curcumin bioaccessibility. Initially, NEI prepared through ultrasonic homogenisation technique, stabilised with modified starch. Next, sequential deposition chitosan carboxymethyl cellulose (CMC) on droplets resulted into formation NEII nanocapsules, respectively. Nanocapsules showed good aggregation over wide range pH (3.0–7.0), salt concentration (50–300 mM NaCl) temperature (30–90 °C 30 min). Digestion studies suggested that polymeric coatings interfered lipolysis (% free fatty acid released) oil considerably reduced increasing layers surrounding droplets. However, bioaccessibility increased adding coating layers. Overall, results indicate developed nano-system could be helpful in improving oral besides incorporating it foods beverages.
